猪肉王国 @ Bavarian House, German Restaurant

我对巴伐利亚(Bavarian) 这词汇的了解不深,抵达这餐厅才了解到原来这是一家德国餐厅。

I do not even know what Bavarian means until I come to the place and find it is actually a German restaurant.


在马来西亚,我最常吃到的就是日本,韩国以及意大利餐,所以对德国巴伐利亚的美食一概不知。所以我会在这放些关于巴伐利亚的资料,对其有了解后,自然会更加懂得欣赏他们国家的美食。

In Malaysia, the most often cuisines I have are from Japan, Korea and Italy, thus I have no idea what is Bavarian food. So I will collect some information and share it here to have better understanding of Bavarian food as well as learn to appreciate it.

巴伐利亚(Bavaria)是位于德意志联邦共和国东南部面积最大的联邦州,但她真正的名字应该是拜恩自由州(Freistaat Bayern),只是巴伐利亚这个源自拉丁文的名字,名声早已远远超过了其本名,这似乎与“巴伐利亚美食”这个关键词有着密不可分的联系。 (文:Maggie Wong)




这家德国巴伐利亚的餐厅坐落于吉隆坡的旧古仔路。不单单只是吧台,里面各处的装潢以及摆设都充满异国风情的味道。

This Bavarian restaurant is located at Old Klang Road, KL. Not just the bar, every corners of their furnishings are exotic.

Roasted Pork Knuckle for 2 person – RM 72

德国的四季分明,夏暖冬寒。夏季气温平均在摄氏25至30度之间,冬季在0度到零下5度之间。全年大约有100天在摄氏0度以下。由于德国三分之一天都处于寒冷状态,所以冬季中的主食自然是各种热量高的肉类。

German is a country with four seasons. One will feel warm in summer and cold in winter. The average temperature of summer is around 25 to 30 degree Celsius, while 0 to 5 degree Celsius during winter time. Throughout the year there are about 100 days below 0 degrees Celsius. Since one per three of the year German is in cold state, therefore during winter season, their staple food mainly comes from variety of high-calories meat.

德国是个偏爱肉食的国家,猪肉在各种肉制品中更是倍受青睐,猪肘肉就是最具有巴伐利亚特色的美食之一。猪肘肉质较为紧实,难以炖透,但巴伐利亚式的猪肘肉在食用时,松软又不乏嚼劲,蛋白纤维丝丝易切断,每一口都能感受到口中的喷香浓郁,搭配口感柔软入口即化的土豆,即便吃再多也不会感到特别油腻。(文:Maggie Wong)


 说说这间餐厅的猪肘肉,皮炸到像虾饼一样的脆!那天我们几个人一起切来吃,就算放久冷了,也还是那么的脆,真的很棒!不但如此,皮的表面色泽漂亮,没有一点烧焦的痕迹。吃下去就如照片所示,不会满口油油的,只有清脆的咀嚼声!

Talking about pork knuckle (served with sauerkraut, mashed potatoes and mushroom sauce) prepared by this restaurant , the skin roasted till like crispy shrimp crackers! Even serve on a table for long hours till cold, it is still so fragile which is really great to taste! Moreover, the surface of the skin color is beautiful, with no scorch marks. Furthermore, it is non oily in the mouth, but crisp crunch!

BBQ Pork Ribs – RM48 
那么大片的烧烤猪排有点吓到我哦!排骨虽没很多肉,但是配上甜甜的黄梨甜酱,依然可以吃得很滋味。每条排骨旁都有很丰富的胶原蛋白,对爱美一族来说,怎能错过这天然的资源呢?

A plate with so much of pork ribs does surprise me!Tender roasted BBQ Pork Ribs (served with fresh vegetables, mashed potatoes and home made BBQ sauce) is very tasty with the sweet pineapple sauce. Not only that, each rib is covered with collagen, which one should not miss the natural source for better skin.

Mixed Sausage Platter for 2 Person – RM85

另一大特色美食是烤香肠,最出名的是慕尼黑白肠和纽伦堡烤肠。白肠是以小牛肉和猪肉,加入洋葱、香菜,切碎搅拌做成的白色肉肠,适宜搭配甜味芥末和盐巴面包;纽伦堡香肠表面偏红,口感不比慕尼黑白肠油腻,更有些脆脆的弹性,是德国街头最常见的香肠之一。喜欢辣味的食客们,往往会在它上面涂上些辣芥末调味。当然除了这两种香肠以外,马肉香肠也很常见,排斥马肉的食客,要特别注意标有Rosswurst字样的,这种都是用马肉制作的。(文:Maggie Wong) 



德国也是出名香肠美食的国家,这是朋友告诉我的。看看这碟上的香肠,是不是也跟我一样眼花缭乱呢?这三种Bratwurst 香肠, Thuringia 香肠以及Emmenthaler 香肠变化多端,搞得我现在也分不清楚它们。相貌长得不多像的香肠,其实都是猪肉做的,不同的是,全部都是用不一样的部分所制作。香肠的肉质很饱满且有弹性,最喜欢配这家餐厅的洋葱浓汁一起吃,因为有少许的芥末,吃起来味道更加丰富。

I have been told by a friend that German is a country well-known for sausages. Looking at the dish above, would you be like me confusing to differentiate each of them? The three types of juicy grilled sausage namely Bratwurst, Thuringia and Emmenthaler (served with mashed potatoes, sauerkraut and onion gravy)have more than one appearances. Although they are not looking same, but they made from bacon using different parts of pork. The sausage is plump and elastic in texture which I like to dip with onion gravy as it will gives the overall taste a kick!

Bavarian Pork Salad – RM 18

最后这道是我个人最喜爱的一道-猪肉片沙拉!这一片片的猪肉吃下去就好像沙爹的烧肉一样的香,但是却比沙爹肉松软好咬。看似简单的猪肉片沙拉,味道可是非凡!加了巴伐利亚甜芥末的沙拉,带点甜,酸和辣,总之是非常开胃的一道料理,也是我觉得超赞的哦!


The last plate -slices of grilled Pork Escalope tossed in Bavarian sweet mustard with red onions and cherry tomatoes is my favourite! The Pork Escalope slice is spiced like satay, but for texture, it is much better. It looks like a very simple dish but the flavour is awesome! Added with Bavarian sweet mustard, it gives gustatory perception of sweet, sour and spicy at the same time, which is very appetizing, and I think it is fabulous!
