It was so delicious that he couldn’t resist going back for a second helping!

Pav Bhaji has become one of my favourite Indian food because it’s the perfect combination of comfort, spice, and indulgence. The bhaji — a rich, buttery mash of vegetables like potatoes, peas, and cauliflower — is cooked with aromatic spices that burst with flavour in every bite. The generous dollop of butter melting on top adds a luscious creaminess, while the soft, toasted pav (bread rolls) perfectly balance the dish by soaking up all that spicy, tangy goodness.

Pani Puri consists of crispy, hollow puris filled with a mixture of mashed potatoes, chickpeas, and spices, then dipped into flavoured water (“pani”) before eating. The water comes in two main varieties — spicy and sweet — and they’re often served together so you can enjoy a perfect balance of flavours.

The spicy water (usually made with mint, coriander, green chilli, and tamarind) gives a fiery, tangy kick that awakens your taste buds.

The sweet water (often made with tamarind, jaggery, and dates) adds a soothing contrast, balancing the heat with a touch of sweetness.
